Interview with Ashley Tudor, Author of “Sweet Potato Power”

I’ve been hounded by folks to get Ashley Tudor on The Fat-Burning Man Show. And now I know why.

I get tons of feedback from listeners about who to have on the show next, but not often from past guests. In Ashley’s case, two past guests independently told me that there’s a lady in the paleosphere who totally rocks and I MUST reach out to her soon because “we’d really be into what the other was up to.” She came with high praise from some pretty cool peeps.

Ashley and I chatted soon after that, had a blast, and accidentally discovered that we both went to Dartmouth, the teeny little college in nowheresville New Hampshire. Ahhh, that makes sense. Small world, but I love how a passion for health brings like-minded folks together.

Who would have thunk?

While her brand-spankin’ new “Sweet Potato Power” book explores the “roots” and health benefits of the humble sweet potato, Ashley also delves deeply into the merits of self experimentation in a very accessible and useful way. In a time when it seems bookstores are becoming saturated with paleo/primal books, her approach is refreshing and unique.

“Sweet Potato Power” is a great read and is visually terrific. Seriously. Ashley did the design herself and killed it. Whether you’re flipping through, feasting your eyes on the crazy awesome recipes, or digging deep into the content, this book is a treat.

She has worked with Fortune 500 companies and small start ups to tackle tough health-related issues such as creating dieting programs, designing strategies to help food companies fight obesity, conceiving new medical devices for primary care physicians, and developing online tools to help people use food as medicine. In recognition of her work, Mayor Gavin Newsom named Ashley one of San Francisco’s Top Innovators in Health in 2010.

    I had to laugh at your breakfast comment! I was eating fish, spinach and sweet potato with mct oil for breakfast and I am always being teased by less fit people!

    Loved this podcast. I bought her book on kindle right after and read it in less than a day. I really like how explains which foods cause inflammation and why.
