Double Chocolate Sweet Potato Brownies

Ingredients
  • ½ cup boiled sweet potato (mashed), skin removed
  • 2 eggs
  • ¼ cup grass-fed butter, melted (or coconut oil)
  • ½ teaspoon vanilla extract
  • ¾ cup blanched almond flour
  • ¼ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup coconut palm sugar
  • ¼ teaspoon stevia extract
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • ¼ cup chocolate chips, plus more for sprinkling over the top
Instructions
  1. Preheat oven to 350°F and grease an 8x8-inch baking dish with coconut oil (or butter).
  2. Beat together ½ cup mashed sweet potato with eggs, butter and vanilla. You can do this in the blender or with a hand mixer. Set aside.
  3. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, coconut palm sugar, stevia extract, sea salt, and baking soda until well combined.
  4. Add sweet potato mixture to flour mixture and stir until well incorporated. Stir in chocolate chips.
  5. Scoop batter into baking dish and use a spatula to smooth the top. Sprinkle chocolate chips over the top.
  6. Bake for until a toothpick inserted into the middle comes out clean, about 30 minutes.
  7. Cool and enjoy.

That’s right, sneaky lil’ sweet potatoes are hiding in these brownies!

I know what you’re thinking… “Why in the world would you put potatoes in brownies?”

Because these tasty tubers are the superstar of starches, boasting a high amount of Vitamin A, plus potassium, Vitamin C and Vitamin B6.

Sweet potatoes are a filling and slow-burning carb great for filling up, boosting prostate health, as well as nourishing glowing skin and a healthy gut.

Plus, they make the brownies moist and rich, just like brownies should be.

    Hey Alyson, these sound amazing! I made brownies with black beans and avocado which turned out great too. Not normally a big bean person, but it was a good way to sneak in some fiber and make really moist brownies. No one has ever guessed what is in them unless they read my blog and had seen the recipe ahead of time. I rarely make baked goods since I don’t really crave them, but it’s always fun to see what you can sneak into them!

    Hi Alyson:

    I made your brownies. They are delicious! Didn’t have any almond flour, so I had to use all coconut. Just needed to add more liquid.

    Also, thank you hubby for having Brian Grasso and Carrie Campbell on his show awhile back. I now watch Abel’s and their podcasts. Between you two couples — I have learned so much!!

    WOW….these are sooooo good!!!! I have seen so many recipes for sweet potato brownies but never tried them until I saw these – they looked so yummy I just had to try them!
    And the amazing thing was, i stored them in the fridge and they stayed moist and delicious and didn’t dry out! Had many experiences of paleo cakes and breads etc. drying out and not being as nice once they have been in the fridge for a day or 2, but these? PERFECT!!!

    Does anyone know if you can substitute Cocoa powder for the chocolate chips if so, what measurement? Thanks. I can’t wait to try these.

      Hi Yolanda — you can leave the chocolate chips entirely. No need to make any substitutions. But if you did want to add some crunch, I bet toasted walnuts or pecans would be a nice addition. Let us know how they turn out.

    This is the BEST healthiest brownie I EVER made! No one knew what it was until after I told them and they ate a few. I know it passed the test with my 9, 10 and 14 year old kids. The would let me know if something does not taste good. It is kid tested and approved!

    Hey Alyson, what’s the reason for the Stevia extract, since the recipe calls for sugar anyway? Can I omit the stevia?

      Yep, feel free to omit the stevia. It helps boost up the sweetness without adding more sugar. If omitting the stevia, you may need to add 1/4 cup or so more coconut sugar. Thanks for the question!

    I can’t use almond flour bc my son has a nut allergy. I have coconut flour and cassava flour. Which one should i use and do i keep the measurements the same as if I was using the almond flour?
    Can’t wait to try this recipe!

    Hi Allyson, made these four times already, everyone loved them. Didn’t reveal the ingredients till they were all consumed. I used stevia and xylitol instead of sugar and baked the sweet potatoes. I used the entire potato including the skin also added cinnamon and replaced the cocoa for raw cacao power….sooo delish!.
    Is there a way I can reduce the amount of fat? I used coconut oil instead of butter and was wondering if I could substitute greek yogurt or applesauce in lieu of the fat.
