Chicken & Arugula Salad with Watermelon

Serves: 2-4
  • Large bunch of Arugula
  • 1 avocado, peeled and chopped
  • 3 tablespoons mint leaves, chopped
  • ½ red onion, chopped
  • 2 cups watermelon, chopped
  • ½ cup walnuts, chopped
  • 2 cups cooked chicken breast, shredded
  • feta cheese (optional)
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • Salt and pepper to taste
  1. Toss arugula, avocado, mint, onion, watermelon, walnuts, and chicken together in a large bowl.
  2. Sprinkle feta cheese over the top, if using.
  3. Salt and pepper to taste.
  4. In a small bottle, combine balsamic vinegar and olive and shake. Add to salad, as needed.
  5. Serve.
