- 2 cups cooked chicken breast, shredded
- 1 large bunch of arugula
- 1 avocado, peeled and chopped
- 3 tablespoons mint leaves, chopped
- ½ red onion, chopped
- 2 cups watermelon, chopped
- ½ cup walnuts, chopped
- feta cheese or goat cheese (optional)
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- Salt and pepper to taste
- Toss chicken, arugula, avocado, mint, onion, watermelon and walnuts together in a large bowl.
- Sprinkle feta cheese or goat cheese over the top (if using).
- Salt and pepper to taste.
- In a small bottle, combine balsamic vinegar and olive oil and shake. Add to salad, as needed.
- Dig in.

A refreshing and really nutritious recipe to follow in this summer. I really like the idea of using mint as flavouring agent, yes it do aids in digestion and lightening up the mood, looking at the nutrients it supplies. it is good for health conscious people.
